Why does a jet of flammable gas at too much pressure blow out a match?

You need Heat, Fuel, and Oxygen to make a fire (usually), so if you are removing the heat with excess gas pressure, it will extinguish the flame. You should turn down the pressure on the jet until it heats up. Once it is hot, you should be able to increase the pressure.
